Each year our fig trees are laden with fruit. It is a contest to see if we can gather them before the wasps eat them. One of my favorite hors d’ oeuvres is to (stuff fresh figs with goat cheese), grill them slightly and then made a reduction of our fig vinegar to pour over the top. Fig vinegar makes perfect vinaigrettes to toss a fresh green Greek Salad, or a Greek Lentil Salad. It just adds a touch of sweetness.
