This vinegar reminds me of the gardens full of rosemary I saw all over the Mediterranean. My favorite (potato salad) is a combination of roasted finger potatoes with roasted garlic, dressed with a vinaigrette made with rosemary vinegar, olive oil and a couple of dashes of cumin to taste. Be sure to leave the skins on the potatoes so the vinegar does not discolor them. This vinegar is also delicious as a marinade for grilled meats.
